Your current stats are 5 Str, 3 Def, 1 Mag. 3 Str is from the start of the game, 1 Def is from the second island. That means you must've leveled for 2 Str, 2 Def and 1 Mag, which is insane, given the low experience that pillbugs and priests give. Starting over and bringing Anast the right water will get you 8 Str, 4 Def, 1 Mag without even having to level (given that you visit the second island).
If you level, choose Defense. This will be good for a total of 5 Def, which results in priests only doing 1/2 damage average.
Yes, this means you'll have to kill that poor guy Johnny again, but once you know the trick to it, I don't think it'll take very long. Also, the priests are a lot easier with 8 Str instead of 5 (2-hit kills are possible, 3-hit kills common) and a Def of 4 instead of 3 (1 damage per hit instead of 2, so you can take twice as many hits before you die).
Also, to get the good water, you'll need to fight a knight. The battle is long and boring, since his defense is high, but it's standard hit-and-run tactics.
To sum it up: If you start over and do it this way, I don't think it'll take more than 15 minutes to get to the point where you are now.
